Testing out this recipe in Pillivuyt’s flame-proof shallow casserole dish was a dream. The ingredients sauté beautifully on the stovetop, bake evenly in the oven, and serve cleanly from the dish.
1 onion, chopped
5-10 oz. fresh spinach leaves, stems trimmed
6 eggs, beaten
3 cups shredded Muenster cheese
1/4 teaspoon salt
1/8 teaspoon black pepper
1. Preheat oven 350 degrees F.
2. Heat oil in shallow Ulysses dish. Sauté onions until soft, stir in spinach until wilted.
3. In a large bowl combine eggs, cheese, salt and pepper. Remove dish from heat and add the egg mixture to the sautéed onions and spinach.
4. Bake 28 minutes. Slice and serve.
